So it’s been forever and a day since I have last blogged. I feel like a horrible person. I was sitting last night watching LOST and I thought about my little blog. Poor thing. I haven’t written or updated anyone since we moved to Tuscaloosa. I promise I am going to do better. I know that the three people who read this will be excited that I finally have written something.

I was just checking out my blog and couldn’t believe that it’s almost been a month since my last post. There is a good reason for that, but I know most of you know about it already. What you don’t know is that we are quickly approaching our move-in day in Tuscaloosa. The other good news that you probably don’t know about is I have a job! I don’t know if you’ll be living in the Tuscaloosa area anytime soon, but if you need an apartment please come by and check me out at The Reserve at North River. I would love to help you find a home with us. No, that’s not a scripted line, but it sounds really cool– I think I’ll use it!

I hope that you know that I have loved living in Prattville/Montgomery. I’m very honored to have said that I have lived here and met some amazing people. I treasure each friendship that I have made and hope to continue those friendships no matter where we shall be in this world.

I love you all and hope to keep you updated better more on what is going on in our lives in Tuscaloosa!

Job Search

I seemed to have forgotten how the hunt for a job is… long. Now let me say that I have only started this week, but I have already applied to multiple jobs in the Tuscaloosa area and have had a couple of bites. It’s really exciting and I hope that I hear more information later on. Like I said in my last post I’m headed to Tuscaloosa tomorrow to take a couple of tests that will hopefully further my application process with them.

Please think of me tomorrow while I’m taking these test. I’m guessing that it’s going to take me about 2 1/2 hours to take 5 tests. I then will be of to Nashville after that.

Oh yeah, and think of Jerrod, too! He has just made it to Bonnaroo, Manchester, TN, and will be there for the remainder of the weekend. He’s going to have a blast and I’m kinda jealous, but I can’t wait to hear all the fun and crazy stories when he gets back!

I know that I have been absent from you for a while now. It’s been a crazy past couple of weeks. The big move is creeping up faster and faster and I’m just now starting to feel anxious. My emotions have been getting the best of me, but thankfully I’m starting to see the light at the end of the tunnel.

If things couldn’t be more crazy starting this Friday, I’m off to start my 619-mile journey from Prattville to Tuscaloosa where I will be taking a test at the University of Alabama– please think of me! Then from Tuscaloosa to Nashville where I will be spending the weekend with my Dad (Happy Early Birthday/ Father’s Day Weekend). Then Sunday I’m off from the Music city back to Prattville! Whew! It’s going to be a long, but fun, journey!

24 years ago today my wonderful husband was born. I’m so blessed to have met him in 2005 and married him in 2008. We celebrated many birthdays together and I hope to share many, many more!

The Young Victoria

If you know me then you know that I love a great movie. Any movie will do, but if you could get a movie that is based on true life and is fairly accurate– I’m definitely in. Yesterday, I watched a movie via Internet: The Young Victoria starring Emily Blunt and Rupert Friend. I love both of the actors. Emily Blunt stole me away in The Devil Wares Prada as Emily; as did Rupert Friend (for all you Pride & Prejudice Fans) as Mr. Wickham. This movie was fantastic! I absolutely loved it and actually can’t wait for it to come out on DVD. Although, I don’t know when that will be since they are not even showing this in the US. The DVD is supposed to come out in June (UK). If you happen to get the chance check out this movie– it’s amazing.

Crock Pot gone wrong

All week I have been planning on making a simple all in one crock pot meal. I love using my crock pot because it makes life so much better. Until… you have what happened yesterday. Apparently I have a really good crock pot. Too good of a crock pot because it cooks very fast.

When I entered through the door last night I could smell it all throughout the house and it smelled so good. I was expecting Jerrod to start getting the plates down and get ready for dinner, but he didn’t. He was telling me what happened while he was putting it all together that morning. Then he showed me how well cooked our dinner was. When I say that it was well cooked that it an understatement– it was burned. I was so sad! We decided that next time that I decide to make this I’m going to have to make it while I’m home and really watch it.

Buffalo Chicken Dip

: Buffalo Chicken Dip

I have never been a dip person; nor am I a fan of buffalo sauce, but when my husband made this dip this past weekend I became completely addicted to both. It’s so addicting that I have heard that it is also called ”crack dip.” This dip is definitely going to be a keeper. Although I think next time we’ll have more people over to share it with.

Buffalo Chicken Dip

1 (8 oz.) pkg. cream cheese, softened
1/2 bottle ranch dressing
1/2 bottle Frank’s Original REDHOT Sauce
1/2-1 cup shredded cheese (cheddar or any blend that you like)
Cooked chicken- any amount that you like (usually use 1 chicken breast and chop it or shred very fine. You can also use canned chicken)

Heat oven to 350 degrees. Place cream cheese into baking dish and stir until smooth.

Mix in salad dressing. FRANK’S hot sauce, cheese and chicken. (You can also sprinkle cheese on top before baking)

Bake aboout 25-30 minutes until mixture is thoroughly heated.

Serve with Tostitios (scoops) or tortilla chips.

Chicken Spaghetti & Gooey Chocolate Caramel Cake

I really hope that everyone had a wonderful Mother’s Day! This year, I had the opportunity to cook for my wonderful in-laws! My Mother-in-law had requested that I make a dish that I had written on my previous blog, Madalyn’s Kitchen, for her Mother’s Day meal. It was delicious! I was so surprised to see that I barely had any of it left! I think that they were stuffed, but then I brought out the dessert– Gooey Chocolate Caramel Cake. It was out of this world delicious! Everyone really liked the cake– even Jerrod and he’s not really into chocolate. I promise you if you make this it will be a crowd pleaser and everyone will be asking you, “How did you make that,” or they will be begging you for the recipe.

Chicken Spaghetti

2-3 Chicken Breast
onion, chopped
bell pepper (green, yellow and red) **used only for color; don’t have to use all**
Velveeta Cheese, about 1/2 of big block
1 can cream of mushroom soup
1 can cream of chicken soup
1 can rotel tomatoes

Season chicken breasts (I use pepper) and boil chicken until done. Take chicken out to cool. Then place uncooked spaghetti noodles in the same pot you boiled the chicken in. While the noodles are cooking chop everything up and place in a large mixing bowl. DO NOT DRAIN WATER. When the noodles are done combine with ingredients in the mixing bowl. Then place in a 9×13 baking dish. Also, place a little chicken/noodle water in the baking dish–this helps break down the soup (I use about 1/3 cup). Bake at 350 degrees for 20-30 minutes.

Gooey Chocolate Caramel Cake

1 box devil’s food cake mix

1 jar hot fudge sauce

1 jar caramel sauce

1 8 oz. tub Cool Whip

mini chocolate chips

toffee bits

Grease a 9 x 13 cake pan. Bake the cake according to package directions. Let cool completely.

After cake has cooled, poke holes in cake. Warm both the hot fudge and caramel slightly in the microwave, just enough so that the sauces are pourable. Pour both sauces over the top of the cake. Let the cake sit for about 15 minutes to let the sauces seep into all the holes.

Top the cake with the Cool Whip. Top the Cool Whip with chocolate chips and toffee bits. Enjoy!
